How to make a healthy veggie bowl with items in your pantry

In the theme of making a dish from ingredients you most likely already have at home, Chef Elizabeth Suvedi from Spectrum Health’s Culinary Medicine program would like to demonstrate how to make a Roasted Vegetable Grain Bowl.

Instructions:
1. Select a grain to cook. Measure 1 cup of the grain and the corresponding amount of liquid.
2. In a medium saucepan, bring the water or stock to a boil over medium-high heat. Stir in 1 cup
of the grain and then reduce heat so liquid is a low simmer, cover and cook for time listed.
3. The grain is done cooking when it is soft and slightly chewy to the bite. Fluff with a fork when
done cooking.

Note: To speed up the cooking time, you can pre-soak the grains in water prior to cooking. Drain soaked water before cooking.

Make your own Plant-Based Bowl by roasting some vegetables, seasoning them, adding some beans and then garnishing with lemon juice or Balsamic Vinegar.
