Fish in Cartoccio Recipe
This can be used with really any cut of fish, and is good with shellfish as well. Pick the best the market has to offer and pair it with farm fresh veggies and you can’t go wrong. Salmon has the highest levels of Vitamin D out there, and shitake mushrooms not only taste great, they are also a source.
INGREDIENTS
4 6-oz. fish fillets, skin and bones removed (you can leave the skin on if you want)
2 pounds assorted fresh veggies, trimmed and cut into similar sizes
salt and pepper
1/2 cup dry white wine
4 lemon slices
fresh herbs
extra virgin olive oil
4 large pieces parchment cut into hearts (or tin foil)
DIRECTIONS
Preheat oven to 450 degrees.
Season the fish with salt and pepper. Layout the parchment and place some veggies on it, place fish on top of veggies, drizzle some wine, finish with herbs, lemon and olive oil. Wrap up the package.
Place the packs on a sheet tray and bake in the oven for 15 minutes.
Serve the whole packet to your guests, slit open and enjoy.
