Cedar Planked Grilled Salmon

Yield 4 servings

 

Ingredients:

4 salmon filets, about 1” thick with skin on

1 Tbsp. extra-virgin olive oil

½ tsp. lemon zest

¼ cup fresh lemon juice

1/3 cup whole grain Dijon mustard

2 Tbsp. fresh dill

¼ cup non-fat plain Greek yogurt

Fresh sliced lemons

4 cedar planks

Preparation:

  1. Prepare grill for direct grilling, over medium heat.
  2. Soak cedar planks in water for at least 30 minutes.
  3. Brush salmon with olive oil.
  4. In a small bowl combine, lemon zest, lemon juice, mustard, dill and yogurt. Brush mixture over salmon and place salmon skin side down on cedar plank
  5. Place salmon on the grill and cook until an internal temperature of 145°F is reached about 15 minutes.
  6. Remove from grill and serve.
