Cedar Planked Grilled Salmon
Yield 4 servings
Ingredients:
4 salmon filets, about 1” thick with skin on
1 Tbsp. extra-virgin olive oil
½ tsp. lemon zest
¼ cup fresh lemon juice
1/3 cup whole grain Dijon mustard
2 Tbsp. fresh dill
¼ cup non-fat plain Greek yogurt
Fresh sliced lemons
4 cedar planks
Preparation:
- Prepare grill for direct grilling, over medium heat.
- Soak cedar planks in water for at least 30 minutes.
- Brush salmon with olive oil.
- In a small bowl combine, lemon zest, lemon juice, mustard, dill and yogurt. Brush mixture over salmon and place salmon skin side down on cedar plank
- Place salmon on the grill and cook until an internal temperature of 145°F is reached about 15 minutes.
- Remove from grill and serve.
