Hummus
Ingredients:
1 can (15 ½ oz.) Chick Peas, drained, liquid reserved
1/3 c. Tahini
1/4 c. Lemon Juice
1 medium clove Garlic
1/2 tsp. Coarse Sea Salt
Place chickpeas, tahini, lemon juice, garlic and salt in food processer. Puree until smooth. Adjust the texture as needed by adding a splash of the reserved liquid.
Spread onto a shallow platter and drizzle with olive oil (optional). Enjoy with pita bread.
Egyptian Kebabs
Ingredients:
1 lb. 85/15 Ground Beef, fresh, never frozen
1 c. Tomatoes, finely diced
1/2 c. Onion, finely diced
1 c. Parsley, finely chopped
1 tsp. Coarse Sea Salt
In a large mixing bowl, combine the tomatoes, onions and parsley. Stir. Add ground beef and sprinkle with salt. Mix well with hands until the ingredients are evenly distributed. Divide into twelve portions and form into football shapes. Grill on high heat until the internal temperature reaches 160°F, about 7 minutes.
