Easy and Delicious Meat-Free Meals

Spicing up your Holiday Foods COMSTOCK PARK, Mich. (March 27, 2014) —

Tired of the same old menu? Need to avoid meat because it’s a Friday in Lent? Chef Jenna Arcidiacono of Amore Trattoria Italiana offers up some tasty recipes that are fast and easy to make at home.

Pomodoro Sauce

1 tbsp extra virgin olive oil
1/2 red onion diced
16 oz can of crushed tomatoes
6 leaves of fresh basil
Sea salt to taste

1.) Saute onions in olive oil until transparent
2.) Add can of crushed tomatoes
3.) Let tomatoes cook down for 5 minutes
4.) julienne basil and add to sauce
5.) add sea salt to taste

Baked fish stuffed with sautéed spinach

2 Fresh cod filet, Mahi Mahi, Tilapia, etc
1 tbsp of extra Virgin olive oil
2 tbsp of diced onion
1/2 tbsp of minced garlic
1/2 lb of fresh spinach
1 diced red bell pepper

1.) Sauté onion and pepper in olive oil for one minute
2.) add the spinach and cook for one minute then turn off heat. Let the rest of the spinach wilt.
3.) place the spinach mixture in the center of the filet and cross the ends to close the filet.
4.) bake at 350 for 12 minutes or until cooked through.
5.) serve with a squeeze of lemon juice and a drizzle of melted butter

pasta alla Diavola

1 tbsp of olive oil
1 tbsp of butter
1/2 cup diced onion
1/2 tbsp garlic
1 oz vodka
1 1/2 of pomodoro sauce (see above)
1/4 cup if heavy cream
1/2 cup of Parmigiano cheese
1 cup of crab or lobster meat
(Bacon or pancetta optional)
Chili pepper flakes (optional)
Fresh parsley for garnish

1.) Sauté onion in olive oil
And butter until transparent
2.)add garlic and the vodka
3.) add crab or lobster and chili pepper flakes to taste
3.) add tomato sauce and cream
4.) throw in your cooked pasta and
5.) toss in the Parmigiano cheese
6.) serve with a little parsley garnish
