$10 Thursday: Add A Little Citrus To Your Meals

This week’s $10 Thursday is all about adding some citrus elements to your meals. Shari Steinbach demonstrates how to make citrus and mixed-grain pilaf.

Citrus and Mixed-Grain Pilaf

Makes 4 servings

1 cup uncooked 7-grain pilaf lend (l sleeve) – $1.99

2 navel oranges – $1.00

1 Tbsp. Meijer olive oil – on hand

1 large green onion, chopped (about 1/4 cup) – $0.10

1/4 cup dried currants or raisins – $0.31

1 to 1/2 tsp. dried tarragon – on hand

  1. In a small saucepan prepare pilaf according to package directions. Remove saucepan from heat; let stand, covered, 5 minutes.
  2. Meanwhile, prepare orange segments. Using a small paring knife, cut away peel. Working over a large bowl to catch the juice, cut between membranes to remove orange segments. Squeeze membranes over bowl to release additional juice. (Juice should measure about 3 tablespoons.) Add oil, onion, currants and tarragon; toss lightly to combine.
  3. Add pilaf to orange mixture; toss gently to combine. Season with pepper to taste, and serve.
